I want to personally thank you for two, very entertaining and enlightening cooking classes. The menus were beautiful on both occasions, and all of the girls had a thoroughly entertaining day. It was not too daunting, and was fun to have the "hand-on" experience. I would not hesitate to recommend you for any future functions. I can't wait to come to "Under the Tuscan Moon", for another fun adventure. Once again, Thank You!

I was lucky enough to experience Pam's cooking class at her villa "Under The Tuscan Moon" in Tuscany. We started with a great menu, we used fresh local produce, with enthusiastic and  professional guidance from Pam we produced a fabulous rustic Italian 3 course dinner. Travelling to Italy was a first for us. After tasting supposedly real Italian  cooking in Rome and not really understanding why restaurateurs where upset when we asked for just spaghetti we travelled to Radda in Chianti to Under the Tuscan Moon B&B where we took a real Italian cooking class from a Australian who was well versed in the real old Italian way of cooking. Pam explained to us that in Italy five course meal where normal and went on to give us almost a full day of (Tuscan)cooking lessons and pairing the proper wine to the meal. The piece the resistance that blew me away was the famous Pasticcio Di Lasagna Con Funghi Di Porcini that was only the primo 2 (wich means second out of five course) Five star to the five course meal that followed.

I attended a cooking class run by Pam Watt during a stay at her Villa in Tuscany in May 2007. The entire day was very interesting and informative and the food produced on the day was exceptional! Pam puts her heart and soul into everything she does, and her cooking is no exception. The only complaint I have is that we drank far too much red wine that night!

Just wanted to say a huge "Thank You" for making our stay in Tuscany absolutely Fabulous.  We were really looking forward to experiencing the joys of Tuscany and it's wonderful food and wine, but nothing could have prepared us for pleasures we experienced whilst staying with you at your beautiful Bed and Breakfast.  Your knowledge of the area and its foods and wine was just mind boggling, but we especially enjoyed our Cooking Class.  I must commend you on the way you ran that class, it was so much fun and yet it was really informative.  I have cooked the Veal Involtini that we cooked that day several times since I came home and I think I've just about perfected it.  It's always a huge hit with dinner guests and off course it gives me a great opportunity to tell about our fantastic time spent with you.    Thank you also for doing the cooking class recently at home.  I had been driving my friends mad talking about our experience in Tuscany, so I really appreciate your doing a class here in Australia.  They all had an absolutely wonderful time and really loved the way that you took the time to explain all the aspects of the cooking process.
